Beet greens are sweet and good steamed. Beets will not bleed as much when cooked if some stem is left on. The smaller the beet, the higher the cost. Large beets may not be older, but larger due to recent rains.

Mid-July to late fall.
Availability
By the bunch with tops. Dug beets, without tops, by the peck or bushel, September on.
